Bacon & Eggs

Ingredients:

  • 8-10 eggs, beaten
  • 12 strips cooked bacon
  • 1/2 cup grated cheese (optional)
  • 1/4 cup crumbled cooked sausage (optional)
  • 1/4 cup chopped vegetables of choice, onions, peppers, mushrooms (optional)
  • Salt and pepper to taste

Directions:

Spray muffin pan with nonstick cooking spray. Line muffin pan with strips of bacon as desired, and then pour in beaten eggs and any desired ingredients (cheese, crumbled sausage, chopped vegetables). Bake at 350 until eggs are set, about 10 minutes or so. Serve warm.
