Easy Pumpkin Cake
3 cups flour
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
2 cups pumpkin (canned)
1 cup oil
2 cups sugar
1 cups nuts (optional)
1 cup chocolate chips (optional)
Mix dry ingredients (first five ingredients) together and set aside. In large mixing bowl, mix pumpkin, oil, sugar, and eggs.
Slowly add the dry ingredients, mixing well. Add nuts and chocolate chips last, if desired.
Pour into greased and floured pan. Bake at 350o oven for 50-55 minutes, or until the center tests done.
(Maple sugar can be substituted for sugar, and you can substitute applesauce for all or part of the oil.)
