Individual Chicken Pot Pie

Ingredients:

  • 1 stick butter
  • 2-5 T flour (watch your roux and adjust accordingly)
  • 1-1.5 c milk (watch your roux and adjust milk as needed for consistency)
  • 1/3-1/2 c chicken stock
  • salt and pepper to taste
  • 1 package frozen mixed veggies
  • 2 cups leftover chopped chicken
  • 1/4 t garlic powder
  • 1/2 t paprika
  • 1 can store bought biscuits

Directions

  1. Make a roux with flour and butter, adding milk to make the béchamel sauce base
  2. Add stock and seasonings
  3. add frozen veggies to saucepan
  4. add chicken, stir
  5. season as needed
  6. heat mixture through gently
  7. dish into individual ramekins, filling just over half
  8. Cover each with a store bought can of biscuits, placing one biscuit on top of each ramekin of chicken mixture
  9. place ramekins on a sheet pan lined with foil
  10. bake at 350 for 12-14 minutes or until biscuits are golden
